4 c. (1lb., 11 oz.) can drained sauerkraut
2 medium tomatoes, sliced
2 Tbs. 1000 Island dressing
3 c. (8 oz.) cooked corned beef
2 c. (8 oz.) shredded Swiss cheese
6 rye crisp crackers, crushed
1/4 tsp. caraway seed, if desired
2 Tbs. butter, melted

Directions:
Directions:
1. Heat oven to 350º. Spread sauerkraut in
12" x 8" or 9" square pan. Top with tomato
slices; dot with dressing.
2. Cover with corned beef; sprinkle with cheese.
3. Combine crushed crackers, caraway seed and
butter. Sprinkle over casserole.
4. Bake, uncovered, 30-40 min.
