2-3 chicken breasts
1 12oz. package of frozen mixed vegetables
½ package of Neufchatel cheese
½ - 1 c. potato flakes (to thicken)
Any biscuit recipe or refrigerated biscuits

Biscuit recipe:
2 c. flour
1 T. baking powder
½ t. salt
¼ c. margarine or butter
¾ c. milk

Directions:
Directions:
Boil chicken. Then remove and add frozen vegetables to water. Cook according to directions on package. (Usually about 10 minutes.) In the meantime, cut chicken into cubes. Slightly melt cream cheese in microwave and add to vegetables. Add chicken to vegetable mixture. Add potato flakes to thicken. Pour mixture in a 9x13 pan.

For biscuits, combine dry ingredients. Then use a pastry blender, fork, or hands to crumble in butter. Stir in milk, just until dry ingredients are moistened. Roll out and use a circular biscuit cutter, or glass.
Put biscuits over veggie chicken mixture. Bake at 450º for 12-15 minutes. Or bake according to directions for refrigerated biscuits.

I prefer to use the biscuit recipe I included because it’s healthier, and I think it tastes better. This is Mom Tew’s biscuit recipe, which is my favorite biscuit recipe!
