2 c chicken, cooked and finely chopped
4 medium green onions, diagonally sliced (1/4 c)
1 can (8oz) sliced water chestnuts, drained and finely chopped
1/2 c spicy peanut sauce
1 tbsp chopped fresh mint leaves (optional)
1/4 tsp crushed red pepper flakes
24 small (about 3 in) Bibb lettuce leaves (1 1/2 heads), breaking larger leaves into smaller size
1/2 chopped roasted salted peanuts or cashews

In medium bowl, mix all ingredients except lettuce and nuts. Spoon about 2 tablespoons of chicken mixture onto each lettuce leaf. Spinkle with nuts.

This recipe is so quick and easy! You can also serve it warm by warming in a small slow cooker. I like to mix the nuts into the mixture and also spinkle some on top!
