This recipe for Danish Aebelskivers, by , is from The Otey Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
2 c. buttermilk 2 c flour 3 eggs 1 tsp. baking powder 11/2 tsp. salt 1 tsp. soda 2 tsp. sugar
Separate eggs, beat yokes, add sugar, salt and milk. Then add flour, soda and baking powder which have already been sifted together. Stiffly beat egg whites into peaks and fold in. Place small amount oil in each cup, fill 2/3 full of dough. Use knitting needle or similar object to turn aebelskivers.
The pan was one of my Mother's Grandmother's. I thought the pan was neat and asked for it when Mother went into assisted living in 2006. I then found new pans and looked up recipes. I love them.
