1 sm onion, diced
2 stalks celery, chopped
1 red bell pepper, diced
1 clove garlic, minced
2 Tbsp butter
2 potatoes, diced
1 carrot, sliced
2 C chicken broth
1 1/2 tsp salt
1/2 tsp pepper
1/2 tsp dill weed
1 zucchini, diced
1 can cream-style corn, undrained
1 can evaporated milk
1 can salmon, drained (or 1 fillet, fully cooked and flaked apart)
Fresh parsley, chopped

Directions:

In a large pot, saute onions, celery, red pepper and garlic in butter,

Stir in potatoes, carrots, broth, salt, pepper and dill. Bring to a boil. Reduce heat, cover and simmer for 20 minutes.

Stir in zucchini, corn, evaporated milk and salmon. Cook over low heat for 10 minutes. Sprinkle with fresh parsley.
