3 dozen package of Romero Corn Tortillas
3 lbs. Boneless, Skinless Chicken Breast
Salt
Canola Oil(or any type of oil you use to fry)

Using a glass pie or cake pan, spray with Pam and arrange 3 pieces of breast around outside of pan. Lightly salt. Place a sheet of wax paper over the top and microwave on high for 5 minutes. Flip chicken to other side placing the side inside to the outside. Cover again and microwave for another 5 minutes. Remove from mivcrowave to cool. If inside of chicken is still pink, microwave for an additional 2-3 minutes. Cool to handle. Shred chicken into strips for placing in tortilla.

The best type of pan to use is cast iron if you have it, otherwise using a large frying pan (but not teflon), fill with about 1/8" of oil, heat. In the meantime, place about 6-8 tortillas in the microwave for 1-1 1/2 minutes to heat tortillas so they are soft and will roll easily. Be careful because they will be very hot. Remove the stack from the microwave and place strips of chicken towards the middle of the tortilla; folding the tortilla over the chicken, tuck the flap under the chicken and continue to roll completely. This will keep it from unrolling when you place it in the pan. Place it in the hot oil with end flap down to keep it from unrolling. Place about 3 or 4 taquitos in the hot oil and then spoon some of the hot over the tops of these and lightly salt or salt to taste. Using tongs, turn these 1/4 turn as they start to brown and get crisp. Place another 3 or 4 in the pan and repeat previous steps. Remove from the pan tipping taquito to let the extra drip out of the inside.

Each pound of chicken will make about 1dozen taquitos.
