5 lbs Quaker Maize
1 lb Lard
2 C Flour
1 T Baking Powder
1 T Salt

Filling
10 lbs Hamburger
1 Large Potato
1 Large Onion
1 Green Pepper
3 T Salt
3 T Garlic Powder
3 T Cumin
2 T Chili Powder
Flour

Directions:

Masa
Mix dry ingredients. Add Lard and mix well with hands. Add enough HOT water to desired texture. Should be moist but not stick to your hands. Roll into balls about the size of small scoop of ice cream. Flatten between two plates till about 1/4 inch thick. Cook in a skillet till lightly browned on both sides. Drop into hot oil and cook till it puffs into a ball. Drain oil and cut in half and fill. (Can be used flat also)

Filling:
Brown hamburger and chop fine. Drain reserving 1/2 C fat. Chop potato, onion and pepper fine. Add to meat and simmer until vegetables are soft. In a sauce pan brown enough flour in the reserved fat to make a thick gravy. Add spices and 3 C water. Pour over the meat and simmer 10 - 15 minutes.

After filling is added top with whatever you like; tomato, avocado, onion, cilantro cheese etc
