2 large chicken breasts, cooked and finely chopped
1 package caneloni or manicotti tubes
1 jar sun-dried tomatoes in oil, drained and chopped
1/2 onion, finely chopped
2 carrots, finely chopped
1 c. cottage cheese, creamed
1 jar pesto (or 2 pkgs pesto mixd with 2 c. water)
2 cloves garlic, pressed
1/2 c. goat cheese

Sauce:
1 jar Alfredo sauce (or 2 pkgs. Alfredo mixed with 2 cups milk)
2 cans cream of chicken soup
1 1/2 c. chicken broth
Parmesan cheese
sun-dried tomatoes for garnish (optional)

Directions:
Directions:
Boil pasta tubes for 5 minutes. Set aside. Mix all filling ingredients well. Fill pasta tubes. For sauce, combine Alfredo sauce, soup and broth, mix well. Spread sauce on botton of casserole dish. Place filled pasta tubes in pan and cover completely with remaining sauce. Sprinkle with Parmesan cheese and sun-dried tomatoes. Bake 40-60 minutes at 350º

Cream cottage cheese in blender or food processor.

I place all the filling ingredients that need to be finely chopped in a food processor. Its much faster than chopping by hand.
