2 T olive oil 2 lg onions
2 lg cloves garlic, minced 1 rib celery, diced
1 carrot, peeled & diced 2 t salt
1 t pepper 1/3 c fresh parsley, stemmed & minced
1 T worchestershire 2/3 c ketchup or chili sauce (divided)
1 1/2 lb lean gr. beef 3/4 lb gr. pork
1 cup soft fresh bread crumbs 2 large eggs, lightly beaten

Heat olive oil in 9 in. skillet over med. heat. Add onion, garlic, celery & carrot and cook, stirring occasionally, 5 min. or until veg. are tender. Add salt & pepper, Worcestershire sauce and 1/3 c of ketchup/chili. Mix well. Remove from heat. Combine with meat mixture,bread crumbs, eggs & parsley in large mixing bowl until well blended.
Lightly spray meat loaf pan with cooking oil. Place meat mixture in pan and top with remaining ketchup/chili sauce. Bake at 350 degrees for 1 hr. 15 min. or until thermometer registers 160 degrees.
