1 Cup Onion Finely diced
1 Cup celery finely diced
2 Cups potatoes
2 Can Clams (minced) 6 1/2 oz
3/4 cup butter
3/4 cup flour
1 qt. half and half cream
1 1/2 tsp salt
2 tlbs. Red Wine Vinegar
pepper to taste

Directions:
Directions:
Drain the juice from the cans of clams and pour over vegetables adding water to barely cover. simmer over medium heat until tender.
Meantime in a heavy saucepan, melt the butter. Add flour, Make a roux & blend until smooth, stirring constantly slowly add the cream. Cook & stir with a wire whip until thick & smooth. Add the vegetables, juice and clams. Heat through, Add salt, pepper and wine vinegar.
