1/2 C. sugar
1/3 C. fresh lemon juice
1 1/2 T. poppy seeds
1 tsp. dijon mustard
1/2 tsp. salt

Process 2/3 C olive oil and remaining ingredients in a blender until smooth. Store in airtight container in the fridge for up to one week. Serve at room temperature.

Everyone who knows me well knows that I do not eat salads. It's not that I have anything against leafy greens, but rather a strong aversion to the smell of vinegar (just about every salad dressing has it). Our good friends, David and Christy Price, had us over for dinner the other week and served this salad dressing on a gorgeous salad. My husband nearly fell out of his chair when I sampled his salad and took a small bowl of my own! Yes...it's just THAT good. Serve on "Apple-Pear Salad."
