1 1/2 lbs. boneless chicken breasts, pounded thin
2 eggs
1 c. Italian breadcrumbs
1 c. shredded Parmesan cheese
6-8 slices mozzarella cheese
2 c. Spaghetti sauce (we like Prego), warmed
1/2 c. vegetable oil

Directions:
Directions:
1. Spread spaghetti sauce in bottom of baking dish. Heat oil in shallow frying pan on medium.
2. Combine breadcrumbs and parmesan cheese on wax paper or a paper plate.
3. In separate bowl, crack eggs and beat with fork.
4. Dip flattened chicken breasts in egg and then coat on both sides with breadcrumb mixture. Place in heated oil.
5. Cook chicken 2-3 minutes per side, depending on thickness, until golden brown and cooked through. Place directly on top of sauce in baking dish.
6. Cover each chicken with a slice of mozzarella cheese and place under broiler until the cheese is melted and golden brown.
