4-5 lb. Pork Shoulder or Picnic
4 fresh garlic cloves
4 tsp. Salt
1/4 cup lime juice
2 tsp. Ground cumin
Olive oil
Red wine vinegar
1 large onion

Directions:
Directions:
Marinate the night before cooking.
Marinate pork in the ingredients. Save some garlic and stuff into the meat. The trick is to cook with the FAT part facing up, do not cover. DRY the FAT with a paper towel and pour only olive oil and salt on the fat part. Cook at 375º for about 4 hours. The top will get crunchy (like a pork rind) this helps the rest of the meat stay juicy. Serve with white rice, black beans and plantains!
