1 c. Warm milk
1 oz. Yeast
1/2 tbs. Salt
1/2 c honey
1 lb bread flour
1 tsp. Cinnamon
1/2 tsp. Nutmeg

1 oz. Soft unsalted butter
4 egg yolks
1 c dried cranberries
1/2 c golden raisins
Finely chopped peel from 2 lemons

Directions:
Directions:
Preheat oven to 400º
Dissolve the yeast in the warm milk; stir in honey and salt
Combine the flour with spices; Mix into the yeast and milk mixture. Add butter and egg yolks, mixing until incorporated; Mix dough in mixer for 6-8 minutes; add additional bread flour if necessary. Place the dough covered in a warm place. Let dough rise until it has doubled. Add cranberries, golden raisins, and lemon peel by hand. Knead until the dough is smooth. Let the dough rest for 10 minutes. Let rise for 20 minutes. Brush with egg wash (one egg mixed with a pinch of salt). Cut a cross on top of the bun with a sharp knife
Bake at 400º for about 20 minutes.
After baking, prepare a sugar glaze with confectioner's sugar and lemon (just brush it on the buns). Best when served warm.
