2 fillets of red snapper (can also use grouper, mahi mahi)
shelled pistachios (crushed)
butter

Sauce:
Captain Morgan's Rum
Heavy Cream
Brown Sugar

Directions:
Directions:
Crush pistachios (Costco's sells bags of shelled pistachios)
Bread fillets on both sides in nuts. Put in a bit of butter and place in baking dish. Bake at 350º until fork comes out clean. About 20 minutes - don't overcook.

Combine rum, cream and brown sugar to taste. Stir constantly on medium heat until mixture is reduced to a thick sauce. Drizzle over baked fish.
