1 cup grated mild cheddar cheese - room temp.
4 (8 ounce) packages of cream cheese - room temp.
1 pint whipping cream
6 egg yolks
6 egg whites - beaten until fluffy
1/4 teaspoon salt
1 cup sugar
1 teaspoon vanilla

Directions:
Directions:
Beat cheese until creamy and well blended. Add whipping cream and egg yolks, one at a time. Beat well. Add salt, sugar, vanilla. Mix well. Fold in egg whites.

Make graham cracker or awieback crust in spring form pan. Cover outer bottom with foil.

Bake at 400º for 20 - 30 minutes. Turn heat down to 300 and bake an additional 2 hours. Leave in oven until cool. Great topped with cherry pie filling.

This is my favorite cheesecake of all time. Not your traditional one. Worth the effort. My Mom made this all the time while I was growing up.
