Ingredients: 2 T. olive oil 1 lb. shrimp (peeled and deveined-make sure to cut off the tails) Crumbled feta cheese 1/4 c. white wine 1 lemon 1/3 lb. fresh green beans (cut in half) one can whole peeled tomatoes One clove garlic

Directions: |
Directions:Heat pan to medium high heat and add the olive oil.
Add garlic and cook for 30 seconds. Add shrimp and cook for about 2-3 minutes until they turn a light pink color
Remove shrimp to a bowl and add another teaspoon of olive oil and the green beans and cook.
Add tomatoes (you may want to cut the tomatoes in half as to make them easier to cook--watch for the spray from the juice!)
Add white wine and cook for about 7-10 minutes.
Put the shrimp back to the pan and sprinkle on the crumbled feta and lemon juice.
Stir the ingredients, cover the pan, and cook for another 3-4 minutes.
Serve over white rice. |
