2 graham cracker crusts
1 stick butter
1 cup chopped pecans
1 1/2 cups coconut (more optional)
1 (8 oz.) cream cheese, softened
1 (14 oz.) can sweetened condensed milk
1 (16 oz.) carton Cool Whip, thawed
1 (12 oz.) caramel ice cream topping

Makes 2 Pies. Melt stick of butter in skillet. Add pecans and coconut, stirring at all times until golden brown. Set mixture aside, reserving 1/4 to 1/2 cups for topping. Combine cream cheese and condensed milk, beating until smooth. Add Cool Whip and mix well. Layer 1/4 of cream mixture into each shell and drizzle caramel topping over. Add 1/2 of coconut mixture to the caramel topping layer. Divide remainder of cream mixture between pies. Follow with remainder of caramel topping and reserved coconut mixture. Cover and place in freezer. Take out 10-15 minutes before serving.
