Ingredients: 1/2 C. softened butter 1 C. sugar (or 1/2 C. Splenda Blend) 2 eggs 2 C. flour 2 tsp. baking powder 1/2 tsp. salt 1/2 C. milk 1 tsp. vanilla extract 3 large very ripe bananas, mashed with fork 1/2 C. milk chocolate chips 1/2 C. chopped nuts (optional)

Directions:Cream butter and sugar (or Splenda Blend) until light and fluffy. Add eggs, one at a time. Set aside. Sift together flour, baking powder and salt. Alternately add mashed bananas, flour mixture, and milk to creamed mixture, beating well after each addition until all ingredients are well incorporated. Stir in chocolate chips and nuts. Spoon batter in greased large muffin tins (6) or small ones (12) -- fill tins full. MIx 2 T. sugar (or Splenda) with 1 tsp. cinnamon and sprinkle on top of each muffin. Bake at 375 for 20 - 30 minutes (smaller tins take the less time) or until toothpick inserted in center comes out clean. |

Notes: This recipe was originally a blueberry muffin recipe which I adapted for bananas and chips. They are very light, fluffy and delicious. The splenda version is great for the diabetics in the family. To make the blueberry muffins, fold 2 to 2-1/2 C. fresh or frozen blueberries into batter. Omit bananas, chips and nuts. These are great too!
