Ziti with Vegetables (LOW FAT) Recipe

Broccoli Flowerets
Cauliflower Flowerets
1 red, 1 green and 1 yellow pepper (strips)
1 onion cut in rings
2 cloves garlic, minced or pressed
2 tbls olive oil
Parmesan Cheese
Dry Marsala Wine or Dry White Wine
2-3 tbls Lemon Juice
1/2 lb Ziti or any tube pasta

Bring water to a boil, add 1 tbls salt and the pasta. Five minutes before ziti is aldente add broccoli and cauliflower. Two minutes later add pepper strips.
Meanwhile in a small skillet lightly brown onion in olive oil, add garlic, saute briefly. Add wine, lemon juice and 2-3 ladles of water from ziti pan. Drain ziti and vegetables. Place in platter, pour oil mixture on top. TOSS. Serve with parmesan cheese.
