3 lb beef (flank or sirloin tip)
1 c dry red wine
8 oz mushrooms, sliced (or more if you like)
1 c beef broth
1-2 bay leaves
black pepper
1/4 tsp salt
1/2 tsp thyme
2-4 cloves garlic, crushed
oil for frying

Directions:

In a glass baking dish mix all the ingredients except the meat and oil. Place the meat in the dish, cover. Marinate overnight in the refrigerator. Turning it over at least once. Take the meat out and dry with paper towels. Heat skillet with a few tablespoons of oil. Brown meat on all sides over high heat. Place browned meat in glass baking dish, cover with marinade and place sliced mushrooms all around. Cover tightly with aluminum foil (to prevent evaporation). Bake at 350ºF for 2 1/2 hours.

Check to make sure the marinade does not evaporate during cooking; you can add water or broth if needed.
