3 lb rock fish
Potatoes as many as you need for your family
2 lg onions
4 tbsp bacon drippings
4 tbsp flour
Hot Water
Salt and pepper to taste

Directions:
Clean and prepare fish by scaling, cutting off head, fins, tail and gut the insides. Soak in salt water about an hour. Leave fish whole. Spray Pam in a 9 x 12 inch baking dish or a larger pan if using more fish. Lay fish lengthwise in pan. Peel and dice potatoes in big chunks. Lay around sides of fish. Cut up onions in rings all over fish and potatoes. Add salt and pepper to taste. Sprinkle flour around sides of potatoes, then add enough hot water to cover fish about half way up sides of pan. Use a fork to blend flour until smooth. Add bacon drippings all over top. Place in oven at 325º for about 2 1/2 hours. This is really good!!!!!
