1-1/2 C. flour
1 tsp. baking powder
1/4 tsp. salt
1-1/2 C. quick oats
1 C. brown sugar, packed
3/4 C. softened butter
3/4 C. apricot preserves

Directions:
Directions:
Mix flour, baking powder, salt, brown sugar and oats together in large bowl. Add softened butter and mix until crumbly. Press 2/3 of mixture into an 8x8 pan. Spread apricot preserves evenly over mixture, top with remaining crumb mixture, pressing lightly onto preserves. Bake 350 for 30 minutes.

I make this with raspberry preserves in place of the apricot preserves for variety. Freeze well layered with waxed paper between single layers.
