Sweet Potato Salad Recipe

2 lb. sweet potatoes
1 red bell pepper, minced
1 green pepper minced
1 red sweet onion, minced
4 T. fresh parsley, chopped

Cook potatoes until just cooked through. Rinse in cold water, skin and cube. Place potatoes, peppers, onion and fresh parsley in large bowl and toss with dressing.

3 T. Dijon mustard
3 T. ketchup
1 tsp. minced garlic
3/4 C. olive oil
3 T. cider vinegar
1 T. Worcestershire sauce
2 T. fresh lime juice
Salt and Pepper (to taste)
In food processor or blender mix mustard, ketchup and garlic. Add the oil slowly while processing or blending; then add remaining dressing ingredients and blend well. Pour over sweet potato mixture. and toss. Chill.

Mom found this recipe in a holiday cookbook insert dated Nov. 13, 1994 and marked it "good". As I've never seen anything like it, I thought I'd include it in our book.
