Heat butter in skillet, (or oleo or crisco) depending on amount of chicken to be fried. You need enough to cover botton of pan, maybe 1/4 inch deep.
Experiment for yourself.
I use a brown paper bag-put some flour and salt and pepper in bottom of it and drop chicken pieces in. Hold top of bag firmly and shake chicken til it is coated. Put by piece into hot grease. Brown on one side, turn and cover with lid. Do not have heat too high. Cook about 1 hour for 3lb chicken. If breast is tender (or gizzard) it is well done. Remove to platter and Serve. May use Shake & Bake for chicken and follow instructions to bake. This is good too.
