Ingredients: 3 CUPS FLOUR 1/3 CUP SUGAR 2 ½ TSP BAKING POWDER ½ TSP BAKING SODA ¾ TSP SALT ¾ CUP BUTTER (1-1/2 sticks) ½ CUP VANILLA CHIPS ¾ CUP DRIED CRANBERRIES (CRAISINS) OR ½ CUP IF USING FRESH – CHOP AND MIX WITH 2 TBL SUGAR, LET SET 10 MINUTES. 1 TBL GRATED ORANGE PEEL (3/4 – 1 TSP DRY) ½ CUP MILK ½ CUP ORANGE JUICE 1 TSP VANILLA OR ORANGE EXTRACT
GLAZE: 1 CUP POWDERED SUGAR 2-3 TBL ORANGE JUICE. Mix until smooth and drizzle on cooled scones.

Directions:Bake at 400 degrees for 12 - 15 minutes til golden brown
Mix first five ingredients. Cut in butter, stir in fruit, chips and orange peel. Make well in center of mixture; add milk and orange juice and vanilla. With fork, stir until dough pulls away from the bowl.
(1st option) - Leave dough in bowl and refrigerate overnight. In morning cut the lump of dough into 4 parts while still in the bowl, then place divided dough onto a cookie sheet that has been lightly sprayed with cooking spray. Pat each portion into a circle (about ½” – ¾” thick) and cut each circle into four pieces.
(2nd option) -Form dough into a ball and turn onto a lightly floured board. Knead gently once or twice and cut dough into four parts. Pat each portion into a circle (about ½” – ¾” thick) then place divided dough onto a cookie sheet that has been lightly sprayed with cooking spray.
Note: Even a short time in frig will result in a flakier scone but may require an extra minute or two of baking. Makes 16 scones. They freeze well. |
