2 C flour
1 t baking powder
3/4 t baking soda
1/2 t salt
2 eggs
2 C buttermilk
3 T butter - melted
2 T sugar

Directions:
Directions:
In large bowl, stir together flour, baking powder, soda and salt. Make a well in center of dry mixture. Set aside.

Separate eggs, reserving the whites. In another bowl, lightly beat egg yolks, buttermilk and butter to blend. Add dry ingredients - batter should be lumpy.

In a clean bowl, beat egg whites with sugar until stiff peaks form. Gently fold egg whites into batter until just combined.

Spoon 1/4 C of batter onto a hot lightly greased griddle or skillet. Cook on med heat for about 2 minutes each side until golden brown.

Serve with warm maple syrup.
