When I was a newlywed, way back in 1972, living
on Dubuque Street, I wanted to make cheese sauce
to put on cauliflower like Mom always did. I had no
clue how to make it, so I called Mom and this is what
she told me:

"You melt some butter in the pot, then add some flour
and mix it in. Then add some milk and stir it until it gets
thick. Add pieces of cheese and stir it in until it melts.
Put some salt and white pepper in to season it."

Never having made any type of sauce or gravy
before, you can just imagine what happened. The
sauce didn't thicken enough, so I kept adding 'some
flour' thinking I just hadn't put enough in...what I
ended up with tasted more like paste than cheese
sauce. After that, I went out and bought Joy of
Cooking and learned the basics!
