Polish Perogi's - homemade Recipe

2 C flour
1 t salt
1 Egg
2/3 C water

Potato Filling:
4 lg potatoes cooked and mashed
1 lg finely chopped onion
1/2 C oil
Salt and pepper
* optional to add cheese to mixture

Cheese Filling:
2 C farmers cheese
4oz cream cheese
1 egg
Salt and Pepper
Sour cream to moisten

Saurkraut Filling:
1 1/2 lbs saurkraut - rinsed under hot water to remove salt
Squeeze dry and chop very finely
1 onion - sauted in 1/3 C oil
Combine kraut, onion and saute covered for 10-12 minutes
Season with salt and pepper

To prepare and cook Perogi's:

Mix dough, knead lightly and cover with towel - set aside

Roll dough thin on floured surface. Cut rounds with glass.

Fill round with filling and fold in half. Press and seal edges. Lay on kitchen towel and cover until finished.

To cook:

Add perogi's to large pot of boiling water - just a few at a time. Boil rapidly for apx 4-5 minutes. Lift out in to strainer and rinse with warm water.

Drain and cover with butter and serve OR fry in butter till brown and serve.

Garnish with sour cream and applesauce
