2 lbs. shrimp - peeled and deveined
2 cups rice
1 1/2 block oleo
1 can onion soup
2 cans Rotel
1 can mushroom soup
1 large onion
1 bell pepper
5 shallots
5 ribs celery
parsley
salt & pepper to taste

Directions:
Directions:
Saute all seasonings in oleo. Add shrimp and cook until shrimp turn pink. Add soups and Rotel, add rice and mix well. Put in casserole dish - cover and bake in 350º oven for 1 hour 15 minutes. If not cooked completely - uncover and bake for an additional 5 minutes.
