olive oil, 2onions, 4 cloves garlic, 3-4 lg carrots,
broccoli - a few crowns, cauliflower - 1 head, 6 med zuchini's,
fresh shredded ginger - 2-3 fingers, roasted chicken, brown rice
(love the rice cooker), soy sauce.

Directions:
Directions:
saute onions and garlic in olive oil. add carrots, broccoli,
cauliflower first as they take longer to cook. then zuchini. drizzle
w/ soy sauce. cook to tenderness you desire. at the end, just a
couple minutes, add ginger and chopped bits of chicken. serve
over rice w/ soy sauce. I love this!

again, ingredients are estimates.

I don't get into roasting chickens anymore as we get them
from costco for $5. I take meat off bones and toss into dishes
such as this, and boil bones for soup.
