3 very ripe bananas
1 c. sugar
1 egg
3 T. oil
1 tsp. vanilla extract
2 c. cake flour
1 tsp. baking soda
1 tsp. salt

Directions:
Directions:
Preheat oven to 400° F. Grease and lightly flour a loaf pan.

Peel the bananas and mash them in a large mixing bowl. Add the sugar, egg, oil and vanilla extract, and beat until the batter is well blended. Beat in the flour, baking soda and salt, and beat until the batter is smooth.

Pour into prepared loaf pan and place in oven. Immediately reduce oven temperature to 350° F.

Bake approximately 45 minutes or until a cake tester inserted in the middle comes out dry. Remove from pan and cool on a rack.
