CAKE BATTER:
3 C flour
2 C sugar
1 t baking soda
1/2 t salt
3 Lg eggs - beaten
1 cup canola oil OR 1/2 C oil and 1/2 C applesauce
1/2 C apple juice
2 t vanilla
3 C finely chopped freshly picked apples

TOPPING:
1 C brown sugar
1/4 C butter
1/3 C whipping cream

Directions:

In large bowl combine flour, sugar, soda and salt. Make a well in center and set aside.

In medium bowl combine eggs oil, apple juice and vanilla. Stir in apples. Add the egg mixture to dry ingredients, just until moistened.

Spread batter in a greased and floured 9x13 inch pan.

Bake º350 for 45-50 minutes

In small saucepan combine the brown sugar, butter and cream. Cook and stir until bubbly and all of the sugar is dissolved. Cool slightly. Drizzle the warm cake with sauce - after it has cooled 5-8 minutes. Place small toothpick holes to allow sauce to seep into the cake.
