4 quarts peeled and dices tomatoes
3 (6 oz) tomato paste
1 c celery
1 c green pepper
1 c red pepper
2 fresh jalopeno pepper
2 cans chile pepper
1 jar sweet cherry pepper
1 tbsp mustard seed
1/2 c sugar
1/2 vinegar
3 onions, diced
1 tsp oregano

Tomatoes skins off and diced to fill ice cream pail. Add 3 onions and 1/2 cup salt. Let sit over night. In the morning, drain excess liquid. Add tomato paste. Dice celery and all the peppers, add to tomatoes. Add mustard seed, sugar, vinegar, green chilies, oregano . Hot sauce or ground red pepper may be added. Simmer 2 hours.
