1/2 C. warm water
1 pkg. dry yeast
2 C. milk, warmed
1/2 C. butter, melted
1 tsp. salt
1 tsp. sugar
2 C. all-purpose flour
2 eggs
1/4 tsp. baking soda

Directions:
Use a rather large mixing bowl -- the batter will rise to double its original volume. Put warm water in mixing bowl and sprinke in yeast. Let stand to dissolve, about 5 mins. Add milk, butter, salt, sugar and flour to yeast mixture, and beat with whisk until smooth. Cover bowl with plastic wrap and let stand overnight at room temperature. Just before cooking waffles, beat in eggs, add baking soda and stir until well mixed. The batter will be very thin. Pour about1/2 to 3/4 C. batter into a very hot waffle iron. Bake until golden and crisp. This batter will keep well over several days in the refrigerator. Makes 8 whole waffles.
