1-1/2 C. all purpose flour
3 T. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 C. sour cream
3/4 C. plus 1 T. milk
2 extra large eggs
1 tsp. vanilla
1 tsp. grated lemon peel
2 ripe bananas, diced, plus extra sliced bananas for serving
butter and maple syrup

In a medium bowl, sift together the flour, sugar, baking powder and salt. Whisk together sour cream, milk, eggs, vanilla and lemon peel. Add wet ingredients to dry ones, mixing only until combined. Melt 1 T butter in large skillet or griddle over medium low heat until it bubbles. Ladle pancake batter using a 1/4 C. measure. Scatter diced bananas on top of each pancake and cook until bubbles appear on top and underside is nicely browned. Flip and cook another minute, until browned. Continue cooking until all batter is used. Serve with sliced bananas, butter and maple syrup. Keep pancakes warm in 200 degree oven if necessary. Makes 12 pancakes.
