Vegetable-oil cooking spray
1 1/2 c flour, plus more for pan
4 eggs
1 lb light brown sugar
1/2 tsp baking powder
1 tsp vanilla
1 1/2 c chopped pecans

Directions:
Directions:
Heat oven to 350º. Spritz a 13x9 pan with cooking spray and dust with flour. Beat eggs in a medium bowl. Pour eggs into top of a double boiler. Stir in brown sugar until mixture is smooth. Cook over simmering water for 20 minutes, stirring constantly, until mixture reaches 240º on a candy thermometer. Remove from heat; let cool 5 minutes. Sift together flour and baking powder. Stir info mixture. Add vanilla and pecans; stir until combined (batter will be thin), and pour into pan. Bake 12 minutes, until crisp and set. Cool completely in pan before cutting into tiny squares; refrigerate in an airtight tin.
