1 lb penne pasta
1/2 to 1 c pine nuts
2 bunches asparagus
1 tsp ground pepper
1 can chicken stock
1 1/2 tbsp lemon juice
1/2 stick butter
1 tsp salt
1/2 c shredded Parmesan

Directions:
Directions:
Preheat oven to 400º. Put pasta water on to boil (pour in penne pasta and boil as directed). Spread pine nuts evenly onto cookie sheet and bake until brown (watch closely, approximately. 4-6 minutes). Snap off bottoms of asparagus spears and discard. Cut asparagus into 1 1/2 inch sections. Mix 1 tsp pepper and 2 tbsp olive oil with asparagus sections.

Remove browned pine nuts from tray and increase oven temp to 425º. Spread asparagus sections onto same cookie sheet, spreading evenly. Bake for 15 minutes, turning asparagus at approximately 8 minutes. To cooked pasta, add baked asparagus, browned pine nuts, butter, salt and chicken stock and stir until all ingredients are combined. Add 1/2 to 3/4 cup of shredded Parmesan to mixture and combine (reserving remaining Parmesan for the top of each individual serving. Serve hot.
