2 EGGS PER SERVING (IF SERVING TWO - 4 EGGS)

COOK ONE CUP OF RICE AND PUT ASIDE. MAKE TOMATO SAUCE IN A BIG FRYING PAN, WHEN DONE ADD TWO WHOLE EGGS PER PERSON, PUT A COVER ON AND LOWER HEAT. WHEN EGGS ARE DONE, PUT RICE IN EACH DISH TAKE EGGS WITH SAUCE AND LAYER OVER RICE. ADD GRATED CHEESE
