Cooks can modify any recipe into one that is low in fat by substituting the following ingredients. Remember to change one item at a time and change in small quantities.
* Heavy Cream * Substitute evaporated skim milk or puree the soup with a cooked potato instead of cream. Focus on tomato and broth-based soups rather than cream soups.
* Regular Cheese * Substitute half the regular cheese with reduced-far-cheese.
* Sautéing vegetables in butter * Saute vegetables in cooking spray, low sodium chicken broth, sherry wine, fruit juice or just lightly steam vegetables instead.
* Frosting * Dust with cinnamon and cocoa or powdered sugar.
* Oil for baking * substitute unsweetened applesauce, yogurt or canned pumpkin.
* Butter for baking * Reduce amount by 1/3 in most baked goods.
* Sugar when baking * Reduce amount by 1/3 in most baked goods.
