1 round (8 oz.) Brie cheese
6 slices salmon lox
1 tsp. capers
1 tsp. chopped fresh dill weed
Fresh dill weed sprigs, if desired for garnishing
Assorted crackers, if desired

Directions:
Cut cheese horizontally in half. Place 5 slices of the lox on the bottom half of the cheese. Sprinkle with capers and chopped dill weed. Top with other cheese half. Roll remaining lox slice to form a rose shape. Garnish cheese with the lox rose and dill weed sprigs. Serve with crackers.

Success Hint: When slicing the Brie in half, use toothpicks to mark the middle and dental floss to cut the cheese round. This can be assembled up to 24 hours ahead; cover and refrigerate. This recipe is very easy and is a crowd pleaser, a must for all our family holiday parties as well as a quick appetizer any time during the year. It is especially good served with rice crackers; sesame, plain, or seaweed.
