1 onion diced
3 cloves of minced garlic (optional)
6-8 fresh tomatoes diced
2 summer squash (yellow crookneck) or zucchini chopped
Mushrooms
2 C vegetarian broth (Chicken seitan broth or vegetable broth)
2 C of water
Chopped chicken seitan (optional) or sprouted lentils (optional)
2 pinches of cumin seeds
1 ˝ C of chopped green chili
Braggs, soy sauce or salt to taste

Directions:
Directions:
Sauté onions and garlic in vegetable oil until clear. Add tomatoes and sauté until soft. Add vegetables as desired and sauté for 1 minute. Add vegetarian broth (Chicken seitan broth or vegetable broth), 2 c of water, chopped chicken seitan or sprouted lentils and cumin seeds. Simmer to almost done and add chopped green chili and soy sauce or salt to taste.
