1 jar Savoie's dark roux
1 container of seasoning (bell pepper, onions, and green onions) from produce section
1 pack of smoked sausage
1 small container of Louisiana oysters
1 fresh hen that has been cut in smaller pieces
1 link of andouille sausage
Tony's Seasoning
1 1/2 gallons of water

Directions:
Directions:
To a jar of Savoie's roux add some water and heat in microwave. In a gumbo pot, add water and roux (darken to your taste), and 1 container of seasoning (bell pepper, onions, and green onions). Bring pot to a boil and then add hen, smoked sausage and andouille. Cook over a medium heat for 2 1/2 hours. Add oysters and cook for one half hour. Turn off the heat and skim the grease. Add about 3-4 teaspoons of Tony's Creole Seasoning or season to taste.
