2 pounds of mild sausage
2 c chopped onions
1 c chopped celery
1/4 c butter
15 slices of stale bread (5 or so cups)...made into crumbs
chicken broth
poultry seasoning
salt and pepper to taste

Directions:
Directions:
Saute onions and celery in butter until limp (not brown), set aside. In large sauce pan brown and crumble sausage until thoroughly cooked. Do not drain. Add vegetables and bread crumbs to browned sausage and mix thoroughly. If too dry, moisten with chicken broth or giblet juices. Season with spices to taste. Use this to stuff chicken or turkey and place leftover in a casserole dish to serve as a side dish.
