Gumbo Recipe

1 medium onion, chopped
1 green or red pepper, chopped
3 cloves garlic, minced
4 cups chicken or shrimp stock
1 cup diced tomatoes
1 cup sausage, cut into rounds
2 stalks celery, chopped
1 pound shrimp
1/2 pound crabmeat
2 cans (6oz) minced clams in juice
2 cups fresh green beans, chopped
1 tablespoon salt
1 teaspoon pepper
1 tablespoon garlic powder
1 tablespoon hot sauce
1 tablespoon Old Bay seasoning

In a large pot,saute sausage for a few minutes, then add onions, peppers, celery and garlic and saute for 5 minutes more. Add tomatoes, broth and spices and simmer for 5 minutes. Add green beans and seafood and simmer on low heat for 20-30 minutes.
