1 lb. shrimp
4 tbsp. melted butter, divided
3 tbsp. chopped onions
1 1/2 cups whole milk
1/4 cup flour
1/2 tsp. salt
1/4 tsp. dry mustard
dash black pepper
1 cup grated Velveeta cheese
1/4 cup dry bread crumbs

Directions:
First, cut the shrimp into small pieces and simmer them lightly (in water) in a saucepan until they are pink. Then drain off the water and set the shrimp aside. While the shrimp are cooling, put 3 tablespoons of butter in a saucepan, add the chopped onions, and cook them until clear. Gradually add the milk to the saucepan and heat it; while the milk is heating, mix together the flour, salt, dry mustard, and pepper. When the milk is hot, slowly blend in the flour mix. You'll have to stir constantly so that it doesn't lump up. When the sauce has thickened, add all but 1/4 cup of the Velveeta, and cook and stir the sauce until the cheese has melted completely. At this point add the shrimp and let them simmer for about 2 minutes. While the shrimp are heating go ahead and grease a casserole dish large enough to hold the contents. When the dish is ready, pour in the shrimp and sauce. Finally, mix together the remaining cheese, all the bread crumbs, and the remaining tablespoon of butter and sprinkle the mix over the casserole. Bake in a 400 degree oven for about 15 minutes. . . and get ready for a feast.
