1 lb. of good quality dried angel hair pasta
1/3 cup extra virgin olive oil
4 - 6 plum tomatoes - chopped
1 big clove fresh garlic - minced
1 big handful fresh basil - julienned (do not used dried basil)
8 ounces fresh mozzarella cheese (must be fresh, not shredded or slices) - chopped up
1/2 cup freshly grated parmesan cheese
sea salt and fresh cracked pepper to taste

Directions:
Directions:
Cook pasta until "al dente" in a large amount of salted water (do not overcook). Meanwhile, in a large bowl, combine the olive oil, garlic, tomatoes, mozzarella, basil, salt and pepper. Add the drained hot pasta (which will slightly melt the cheese). Cover with parmesan. Toss well and enjoy.
