1 pkg. (10 oz.) chopped frozen spinach
2 eggs
1 tsp. salt
1/2 Pint ricotta or cottage cheese
1/4 C. grated Parmaesan cheese

Directions:
Directions:
Cook spinach as directed on package. Drain well. Beat eggs with fork and add remaining ingredients. Mix in spinach and put into a greased casserole dish. Sprinkle with a little extra Parmesan cheese. Bake at 350 for 35 minutes, or until set.
