nonstick cooking spray
1 1/2 cup yellow cornmeal
1/2 cup self-rising flour
1 1/2 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1/2 cup chopped onion
2 Tablespooon chopped fresh parsley
2 cups skim milk
1 egg white, lightly beaten
1/2 cup water

Directions:

1. Preheat oven to 400 degrees F.
2. Lightly coat an 18-cup muffin pan with
nonstick cooking spray
3. Mix the cornmeal, flour, baking powder,
sugar, and salt together.
4. Fold in the onion, parsley, milk, egg white,
and water.
5. Pour the batter into the prepared muffin pan
filling each 3/4 full.
6. Bake 20 t0 25 minutes or until golden brown.
Makes 18 hush pupies.
