Peach Melba Mousse Recipe

1 can (11 oz.) peaches, drained, save juice
1 small can mandarin oranges, drained
4 egg yolks
1 cup milk
1/2 C. syrup from peaches
2 pkg. clear gelatin
1/3 C. Grand Marnier liqueur
2 C. whipping cream, beaten to soft peaks

Directions:
Beat egg yolks and milk together. Add syrup from peaches and sprinkle mixture with gelatin. Heat until gelatin dissolves. Remove from heat and add 1/3 C. Grand Marnier liqueur. Chill gelatin mixture until the consistency of egg whites. Puree drained peaches and oranges and mix in 1 cup sugar. Blend puree into gelatin mixture. Gently fold in 4 stiffly beaten egg whites and then the 2 cups whipping cream beaten to soft peaks. Pour into mold.

Topping:
2 pkgs. frozen red raspberries, thawed
2 tsp. cornstarch
1 T. Grand Marnier liqueur
Combine raspberries and cornstarch and cook mixture until bubbly. Cook two minutes longer. Strain and discard seeds. Add 1 T. Grand Marnier liqueur. Chill and serve over mousse.
